The party season is in full swing and if you are looking to host your own Christmas party, festive dinner or just want to treat colleagues to a Christmassy delight, we have come up with a few party snack recipes for you to try at home.
Turkey and Cranberry Christmas Crackers
Fun, glorified sausage rolls made with turkey and cranberry sauce.
Makes 20 Crackers
450g frozen puff pastry, thawed
350g cooked and finely chopped turkey meat
2 tsp cranberry sauce or jelly
salt & freshly ground black pepper
egg wash (whole egg mixed with salt)
Set the oven at 200°C / gas 6. Oil a baking sheet.
Roll out the pastry to a thickness of 3mm. Cut into 10cm / 4in squares.
Mix the turkey meat with the cranberry sauce and season well. Place a dessertspoonful of this mixture in the centre of each square and roll the pastry into a cylinder. Brush the join with water to secure the edges. Twist each end of the pastry in towards the filling, to form a cracker. Brush the crackers with egg wash and bake for 15 minutes. The turkey crackers can be re-heated or served cold.
Stuffed Fresh Dates
These spicy dates are sticky, moreish and super easy to make. You can also use prunes instead of, or together with dates.
20 fresh dates
100g cream cheese
½ tsp ground cinnamon
½ tsp mixed spice
1 tsp lemon juice
75g chopped peanuts
Slit the dates open lengthways and remove the stones. Mix the cream cheese with the cinnamon, mixed spice and lemon juice. Pipe this mixture into each date. Dip the dates, cheese-side down, into the chopped peanuts and leave to chill for 2 hours before serving.
