WHAT TO LOOK FOR IN THE MARKET IN APRIL?
Spring is in the air, the garden is waking up and so are we! The increased light, longer evenings and an abundance of fresh veggies and fruit seem to do wonders for the mood. Aren’t you excited to see the early summer produce ripening? Asparagus is one of the first spring products to show up in the markets – their vibrant colour and intense grassy taste is like a breath of fresh air.

INGREDIENT OF THE MONTH: MYSTERIOUS MORELS
This month the shining stars are definitely mushrooms – especially morels. You know morels, mysterious mushrooms, resembling something out of science fiction. They are rare, finding them takes knowledge, skill and a lot of time and lastly, their season is quite short. Therefore if you’re not an experienced ‘morel’ hunter rather try your luck at Borough market or any other farmers market.
Since morels are usually the star of the dish, it's best to keep preparation and other ingredients simple. Sauté them with a bit of butter, garlic and parsley, and serve it with crusty sourdough bread – we can’t imagine a better way to start your day.
Our chefs got creative and came up with this stunning ‘foraging’ starter celebrating mushrooms – the dish features mushroom pate, morel beignet (a type of deep-fried fritter) and pickled girolles served with hazelnut dressing. Send us your masterpiece highlighting your favourite mushrooms!
