Meatless Monday - In support of salad

Salads don’t have to be boring! We all know that we should really be eating at least five portions of fruit and veg each day but sometimes this can seem like a real chore. Adding small hits of crunch or exciting flavours to a salad adds to the interest and ensuring that you use fresh ingredients make a huge difference – there is nothing less inspiring than a limp, sad lettuce leaf staring at you from your lunchbox! A drizzle of oil and some Nigella seeds on a simple green bean salad, a grating of horseradish on a mixed tomato salad... the combinations are endless and yet uncomplicated! By contrasting colours in your dish (or using unusual colours) you will have something interesting to look at as well as eat. Purple and pink are not colours found in food very often but are visually stunning – even a simple potato is more interesting when it is purple!
