Meet Lucinda the happy hog who will be spit roasted at Ruth's wedding tomorrow at Royal Hospital Chelsea

Lucinda will be cooked by uniformed chefs & carved into Granary Buns in the gardens of Royal Hospital Chelsea tomorrow. Served with Apple Sauce and Whole Grain Mustard, there'll also be Jacket Potatoes and Leafy Salad. 

Lucinda will be served in the evening of the wedding reception. She's been cut open, stuffed with a marinade then stitched back together. Our recipe for the marinade is:

  • 5 tbsp sunflower oil
  • 1 bulb of fennel - sliced 
  • 1 red onion - sliced
  • 2 cloves of garlic - finely diced
  • 1 tbsp fennel seed
  • 1 tbsp whole grain mustard
  • 1 tbsp of ground aniseed
  • Salt & pepper

  • After a day of wedding celebrations, afternoon tea (you should see our egg-free scones and egg-free chocolate chip cookies!) and sociable hog roast, in an extraordinary British venue, the happy couple are going to be feeling loved-up before they set off on their honeymoon.
