3 Jan 2014 | Paul Wells
If you are not tired of partying yet but perhaps feel it is time for a bit of a detox, why not try making some of these delicious 'mocktails'? Packed-full of vitamin-y goodness, they taste and look amazing (you might not even miss the alcohol!) and are a great option for absolutely everyone, especially those wanting to make a healthy start to the New Year!
Pink Grapefruit and Pomegranate Soda
Merry, bright, a little spiced and very festive!
1/2 cup pink or red grapefruit juice (1 small grapefruit)
1/2 cup pomegranate juice (1 medium pomegranate)
1 cup sugar
2 star anise pods
Pomegranate arils for garnish
Combine grapefruit and pomegranate juice, sugar, and star anise in a small saucepan over medium heat. Boil for 1 minute, stirring constantly. Remove from heat and let sit 30 minutes. Strain and discard solids. Let syrup cool completely.
To serve, fill an 8-ounce glass halfway with ice cubes, add 3 tablespoons of syrup, fill with soda water, and stir. You can add more syrup for a sweeter or stronger flavor. Garnish with pomegranate arils.
Virgin Garden Mary
Hot and bursting with vitamins!
1 cucumber, washed and cut into chunks
2 cups vegetable juice
2 tbs. fresh lemon juice
1 tbs. prepared horseradish
1 tbs. Worcestershire sauce
1 tbs. celery salt
hot sauce, to taste
freshly ground black pepper, to taste
1 cup carrot juice
celery sticks and cucumber slices for garnish
Put the cucumber chunks and salt in the bowl of a food processor and puree until very smooth. Transfer to a fine mesh strainer set over a pitcher and let stand until all the liquid has drained; discard solids and reserve the juice.
In a pitcher, stir the vegetable and lemon juices, horseradish, Worcestershire, celery salt, hot sauce and black pepper together until well combined.
To serve, put a celery stalk in a 10-ounce Collins glass and fill it with ice. Fill the bottom third with the tomato juice mixture; pour an equal amount of carrot juice slowly into the glass to create layers. Fill the top of the glass with cucumber juice. Garnish the glass with a cucumber slice and let your guests mix the layers and enjoy.
