Pear & Marmalade Bakewell Tartlet

One of Autumn's many bounties, pears are endless in their uses. Our recipe is the perfect dessert for a winter dinner party.

Ingredients for six short crust pastry tartlet cases:

*Ensure that you blind bake the pastry cases before spooning in the filling.

Filling:

400g coarse cut marmalade                     110g plain flour

400g chunky peeled pear pieces              1 tsp baking powder

225g butter                                               225g ground almonds

225g sugar                                                2 tbsp milk

2 eggs                                                       3 tbsp flaked almonds

Method:

Layer your perfect pastry cases with marmalade and then the pear. Cream your butter and sugar together. Add eggs, flour, baking powder and ground almonds. Stir in the milk. Spoon the mixture into the tartlets on top of the pear and marmalade, then finish with flaked almonds.

Bake in a moderate over (200°C) for 10 minutes or until lightly golden brown.

Serve with a generous helping of whipped cream.
