Are you excited for Pancake Day 2017? We sure are. Today is the day to showcase your flipping skills either in your own kitchen or, if you are brave enough, join one the numerous pancake races all over London.

What is Pancake Day?

Pancake Day or Shrove Tuesday always falls 47 days before Easter. Because the date of Easter Sunday is dictated by the cycles of the moon, Pancake Day can occur anytime between 3rd February and 9th March.

Shrove Tuesday is the day that precedes Ash Wednesday. It marks the last day before Lent, traditionally a period of abstinence, associated with clearing your cupboards of things like sugar, fat and eggs.

In the US this day is called Mardi Gras or Fat Tuesday - the Mardi Gras season actually begins on Epiphany, a Christian holiday celebrated on 6th January, otherwise known as Three Kings Day and it lasts until midnight tonight. In Brazil this period between Epiphany and Fat Tuesday is called Carnival which marks the beginning of Lent, the 40 period before Easter.

Pancake Day came much later as a way to use up rich, fatty foods such as eggs, milk, and sugar before fasting.

What’s the best way to prepare pancakes?

There are numerous ways to make pancakes – use what you have in your cupboard, be creative, go wild. Egg free, gluten free, sweet or savoury, fluffy American or thin French style crepes….we could go on and on. Also, and that's really important, think about toppings and fillings to enhance the flavour of your pancake. Hard work, right?

To give you an idea here's our ultimate favourite pancake recipe – seasonal, tasty and super easy to make.

Recipe: PI Pancakes with Healthy Homemade Nutella

Pancake Batter                                                                                  
1 whole egg                                                                                        
1 egg yolk                                                                                          
275ml milk                                                                                         
110g plain flour                                                                                  
Pinch of salt                                                                                                                                                                                

Healthy Homemade Nutella
240g raw hazelnuts
1 tbsp coconut extract
25g cocoa powder
80g pure maple syrup
1/4 tsp salt
120ml milk of choice

Roast hazelnuts for 8 minutes at 190C. Rub them together in a paper towel to get the skins off. In a food processor, blend the nuts until they’ve turned to butter, then add all other ingredients and blend until it’s smooth like Nutella!Whisk the pancake batter until smooth then fry 6 individual pancakes in an oiled pancake pan.
