Real Bread Campaign: Black Pepper and Prune Bread

We've joined the Real Bread Campaign (something we're very passionate about!) and we bring you the first in a series of some of the delightful breads we bake here at PI HQ. Today is the delectable Black Pepper and Prune Bread, made in our kitchen by Kunle!
Ingredients to make one loaf
313g Rye Flour
2g Cracked Black Pepper
100g Strong Flour
180g Prunes, chopped
Combine the rye flour, cracked black pepper, salt, yeast, strong flour and chopped prunes, then mix in the water using a bread hook or by hand.
Leave the mixture to proof for about an hour, whilst you're waiting you can prepare your tins by greasing them and lining with parchment paper.
Kneed and shape the dough in the tins, leave to proof again, then bake on 180C for 40-45 minutes.
Et voila, real bread!
