Wild Boar Chops with Caramelized Apple and Roquefort

Wild boar is fabulous robust meat which works well with other strong flavours such as this Roquefort butter. The meat has a sweet, nutty and intense flavour and it is a deep red colour. Boar can be substituted for pork or venison in most recipes and should always be served well-cooked.

Ingredients for 6

6 wild boar chops
1 onion
salt and pepper
225g unsalted butter
2 cox’s apples
115g Roquefort cheese
15g butter
2 tbsp chopped chives
1 tbsp soft brown sugar
salt and pepper

Roquefort butter

Finely dice the onion and fry until soft in a little bit of unsalted butter. Leave to get completely cold.

Soften the remaining butter and crumble in the Roquefort, then add the cooked onion and beat all three things together. Season with salt and pepper and chopped chives.

Roll the Roquefort butter into 5cm diameter log, wrap in cling film and chill until needed.

Wild Boar chops

Season the chops wilt salt and pepper and seal both sides in a heavy-based frying pan with a bit of oil. Transfer to a baking tray and bake in the oven at 200C for 20 minutes.

Whilst the chops are cooking, cut each apple into 3 discs taking out the core. Then fry them in butter and a little sugar until caramelised.

Top the chops with a disc of apple, a slice of chilled Roquefort butter and flash under a hot grill until the butter starts to melt. Serve with its own juices.
