Brandy Snap Baskets Recipe

This week the amazing PI kitchen have been cooking up beautiful brandy snap baskets!
Brandy snap baskets are a fun-to-make, impressive looking treat. You can serve a finished product with a variety of delicious fillings. Our head chef decided to fill them with a handmade lemon-grass and lime sorbet with kissel of red fruits, which served as a show stopping dessert at Banqueting House event this week.
1lb golden syrup
In a pot melt the butter, sugar and golden syrup. When all melted add flour and stir up a whisk. Put the mixture in the fridge to cool. When it’s cold, make balls in size wanted.
Bake in the oven at 180 C till the colour change in gold brown.
Take the tray out from the oven and leave it to chill for half a minute. Depending on the size of the snaps you would like to make, you can choose limes, lemons or oranges, for the snaps to take shape.
And they are ready in a couple of minutes!
