PI's 25 Steps to Christmas - Step Twenty Four: What to leave out for Santa on Christmas Eve

If you've been following our steps to Christmas you should be almost ready for the big day! This step is arguably the most important; you must to leave some food out for Santa and his reindeer, they've got a very busy night and need to keep their energy up!

It's fair to say that Santa will probably be sick of the sight of mince pies by the time he get to us in London, so here are some recipes we think he will love!

Mulled Apple Juice

After all it is not responsible to drink on the job, and it is something the reindeer can enjoy too!

Ingredients:
1L Apple Juice
Strips of Orange Peel
1 Cinnamon Stick
3 Cloves
Sugar or Honey to taste

Method:
Simmer the apple juice with the orange peel, cinnamon sticks and cloves for 5-10 minutes until the flavours have infused and sweeten to taste. 

Christmas Pudding Cupcakes

Miniature sized, chocolate Christmas puds, lucky Santa!

Ingredients:
50g Dark Chocolate
140g Butter
100ml Soured Cream
3 eggs
140g Self-Raising Flour
140g Caster Sugar
100g Chocolate Chips
6tbsp Cocoa Powder
1 tsp Baking Powder
250g Icing Sugar
1tsp Custard Powder
Some Green and Red sweets or icing pens

Method:
Pre-heat the oven to 190C/Fan 170C/Gas 5. Melt the butter and chocolate together, allow to cool a little then stir in the soured cream and lightly beaten eggs. Mix in the flour, sugar, cocoa and baking powder together in a bowl, add the chocolate mixture and stir until smooth and finally mix in the chocolate drops. Spoon the mixture into a muffin tray, place in the oven and bake for 20 minutes.
To make the icing mix together icing sugar, custard powder and 2tbsp of water. After your muffins have cooled you can decorate them with the icing, sweets and icing pens. 

Don't forget to leave a carrot out for Rudolph too, although we heard he loves Chocolate so you might have to leave two cupcakes out!
