Fillet of English Rose Veal, Wild Mushrooms, Celeriac Mash

English rose veal is a sumptuous, tender meat and a perfect vehicle for wild mushrooms. It is basically calf meat which has been allowed some grazing, giving it more flavour and character than white Dutch veal. 

Ingredients for 6

  • 1kg English rose veal
  • 400g wild mushrooms
  • 60g butter
  • Salt and pepper
  • 800g celeriac purée


Seal the veal in hot oil on all sides before roasting in a hot oven (220°C) for approximately 15 minutes. Toss wild mushrooms in seasoned butter and keep warm. Carve the rare veal at the last possible moment and serve with the mushrooms and celeriac.
